Dirty Chicken and Bacon Fries (Print Version)

# Ingredients:

02 - 1.1 pounds boneless, skinless chicken breast
03 - 5.3 ounces smoked bacon, diced

10 - 1 gherkin, finely diced

# Steps:

01 - Preheat the oven and cook the oven chips according to package directions until golden and crisp.
02 - Cut chicken into bite-size pieces and toss with garlic granules and mixed herbs. In a skillet over medium heat, cook the seasoned chicken and diced bacon together until the chicken is cooked through and the bacon is golden and crispy. Set aside.
03 - In a separate pan over medium-low heat, add the vegetable oil and sliced onions. Cook, stirring occasionally, until onions are deeply caramelised and golden brown. Remove from heat and set aside.
04 - Once the oven chips are cooked, transfer to an oven-safe platter. Season with salt as needed. Layer evenly with the cooked chicken and bacon, then sprinkle both cheddar and mozzarella over the top.
05 - Place under the grill or in an air fryer at 350°F for 5 minutes, or until the cheese is fully melted and bubbling.
06 - In a mixing bowl, combine mayonnaise, finely diced gherkin, gherkin vinegar, American mustard, tomato ketchup, and a pinch of salt. Whisk together thoroughly until smooth.
07 - Drizzle the prepared sauce generously over the hot loaded fries. Top with caramelized onions and garnish with freshly chopped parsley if desired.
08 - Transfer to serving plates and enjoy while hot.
