Place one tortilla on a flat surface and spoon a portion of the shrimp mixture into the center.

Fold the sides of the tortilla over the filling and roll tightly to enclose.

Dip each rolled burrito bite in beaten eggs, then coat thoroughly with breadcrumbs.

Pour vegetable oil into a deep pan to a depth of approximately 2 inches and heat over medium temperature.

Once oil reaches 350°F, carefully lower burrito bites into oil and fry 3–4 minutes, turning for uniform golden color.

Remove fried burrito bites and drain on paper towels. Serve warm with additional Alfredo sauce if desired.
