Dairy Free Rice Pudding (Print Version)

# Ingredients:

→ Base

01 - 50 g round rice or risotto rice (Arborio)
02 - 250 ml plant-based milk of choice
03 - ½ teaspoon vanilla extract
04 - 1 tablespoon maple syrup or alternative (agave, coconut)
05 - 1 cinnamon stick or ½ teaspoon ground cinnamon

→ Garnish

06 - Pinch of ground cinnamon or cacao powder

# Instructions:

01 - Pour the plant-based milk into a saucepan and add the cinnamon stick or ground cinnamon.
02 - Bring the milk to a boil over high heat.
03 - Reduce the heat to low and add the rice. Cook until tender, approximately 20-30 minutes, stirring frequently to prevent sticking.
04 - Remove from heat and discard the cinnamon stick if used. Stir in the vanilla extract and maple syrup until well combined.
05 - Transfer the pudding into individual ramekins or a serving dish. Allow to cool slightly before serving. Dust with ground cinnamon or cacao powder just before serving.

# Notes:

01 - Can be served warm or cold according to preference.
