Pour the plant-based milk into a saucepan and add the cinnamon stick or ground cinnamon.

Bring the milk to a boil over high heat.

Reduce the heat to low and add the rice. Cook until tender, approximately 20-30 minutes, stirring frequently to prevent sticking.

Remove from heat and discard the cinnamon stick if used. Stir in the vanilla extract and maple syrup until well combined.

Transfer the pudding into individual ramekins or a serving dish. Allow to cool slightly before serving. Dust with ground cinnamon or cacao powder just before serving.
