Crostini Mini Bruschetta Bites (Print Version)

# Ingredients:

→ Bread

01 - 400g baguette or French stick, sliced into 1 cm pieces

→ Toppings

02 - 4-6 vine tomatoes, finely diced
03 - ½ red onion, finely diced
04 - 2 cloves garlic, minced
05 - 1 bunch fresh basil, finely chopped

→ Cupboard Essentials

06 - 4 tbsp olive oil
07 - Salt

# Instructions:

01 - Preheat oven to 180°C.
02 - Slice the baguette into 1.5 cm wide pieces, approximately the width of a finger.
03 - Place the diced tomatoes and onions into a sieve over a bowl. Season generously with salt, stir, and set aside to release excess liquid.
04 - Add minced garlic to a chopping board with a pinch of salt. Use the side of a knife to repeatedly squish and drag the garlic until it forms a paste.
05 - Combine the garlic paste with olive oil in a mixing bowl. Season with a pinch of salt and mix well.
06 - Lightly brush the bread slices with half of the garlic oil and arrange them on a baking tray. Bake for 7 minutes until lightly toasted.
07 - Add drained tomato and onion mixture to a mixing bowl. Stir in the remaining garlic oil and season with additional salt, if needed.
08 - Top the toasted bread slices with the tomato and onion mixture. Garnish with fresh chopped basil.

01 - For the best flavor, use fresh vine or cherry tomatoes.
02 - Slice the bread evenly for consistent toasting.
03 - Avoid over-toasting or burning the bread in the oven.
