While croissants toast, whisk eggs in a bowl until fully blended.

Melt butter in a medium skillet over medium heat. Pour in whisked eggs and cook, stirring gently, for 3 to 4 minutes until softly set. Season with salt and black pepper.

Place a slice of cheddar cheese on each croissant bottom half, followed by a slice of bacon.

Spoon scrambled eggs over bacon and cheese on each croissant half. Top with fresh spinach leaves.
