01 - 10 red potatoes, diced into 1/2-inch cubes
02 - 1 pound boneless, skinless chicken breast, cut into 1-inch cubes
03 - 14 ounces kielbasa, sliced into small rounds
04 - 1 small white onion, diced

→ Cheese and Dairy

05 - 2 1/2 cups shredded cheddar cheese, divided
06 - 10.5 ounces canned cream of chicken with herbs
07 - 1/2 cup sour cream
08 - 1/2 cup heavy cream

→ Seasonings

09 - 1 teaspoon Italian seasoning
10 - 1 teaspoon garlic powder
11 - Salt and black pepper, to taste

# Steps:

01 - Lightly grease the crockpot insert. Combine diced red potatoes, cubed chicken breast, sliced kielbasa, diced onion, and 2 cups shredded cheddar cheese in the crockpot.
02 - In a separate bowl, whisk together cream of chicken with herbs, sour cream, heavy cream, Italian seasoning, garlic powder, salt, and pepper until fully combined.
03 - Pour the cream sauce evenly over the potato mixture in the crockpot. Stir gently to coat all ingredients.
04 - Sprinkle the remaining 1/2 cup shredded cheddar cheese evenly on top.
05 - Cover and cook on low for 6 to 8 hours or on high for 5 hours, until potatoes and onions are tender. Avoid overcooking to prevent potatoes from becoming mushy.
