Crispy Torn Halloumi Salad (Print Version)

Golden halloumi pairs with greens, avocado, and citrusy vinaigrette in a bright, flavorful dish.

# Ingredients:

→ Vinaigrette

01 - 2 tablespoons champagne vinegar
02 - 2 tablespoons fresh lemon juice
03 - 1 tablespoon honey
04 - 1/4 cup extra-virgin olive oil
05 - 1 tablespoon tahini or Dijon mustard
06 - 1 small shallot, finely chopped
07 - Kosher salt, to taste
08 - Freshly ground black pepper, to taste

→ Salad

09 - 8 ounces halloumi cheese
10 - 1 teaspoon extra-virgin olive oil
11 - 1 large head butter lettuce, separated into leaves
12 - 1 ripe avocado, sliced
13 - 2 small cucumbers, sliced
14 - 5 radishes, thinly sliced
15 - 2 tablespoons fresh chives, chopped
16 - 2 tablespoons fresh mint leaves
17 - 2 tablespoons fresh dill sprigs
18 - 1/2 cup prepared vinaigrette
19 - Kosher salt, to taste
20 - Freshly ground black pepper, to taste

# Instructions:

01 - Combine champagne vinegar, lemon juice, honey, olive oil, tahini or mustard, and finely chopped shallot in a small bowl or mason jar. Season with salt and pepper. Whisk or shake well until emulsified. Taste and adjust acidity, sweetness, and seasoning as desired.
02 - Preheat oven to 450°F (232°C) and line a baking sheet with parchment paper. Tear halloumi into large, rustic chunks. Arrange evenly on the prepared tray and drizzle with olive oil. Bake for 10-12 minutes until golden on top. Carefully turn the pieces and bake an additional 10 minutes until both sides are crisp and browned. Remove from oven and set aside to cool slightly.
03 - Arrange butter lettuce leaves across a large serving platter. Evenly distribute avocado slices, cucumber rounds, sliced radishes, and fresh herbs over the greens. Season with salt and black pepper to taste.
04 - Scatter baked halloumi over the salad. Drizzle generously with the prepared vinaigrette just before serving. Serve immediately and enjoy.
