Preheat your oven to 425°F (220°C). Pop a baking sheet inside while it heats up - this little trick helps make your fries extra crispy!

Peel those sweet potatoes if you like (totally optional!) and slice them into ¼-inch thick fries. Try to keep them roughly the same size so they'll cook evenly.

Let your cut fries hang out in a bowl of cold water for about 30 minutes. This removes extra starch and helps them get nice and crispy later.

Drain those fries and pat them really dry with paper towels. Toss them in a bowl with olive oil, garlic powder, paprika, salt, and pepper. If you're using cornstarch for extra crunch, sprinkle it on now and give everything a good mix.

Carefully grab that hot baking sheet from the oven and spread your seasoned fries out in a single layer - give them some space to crisp up! Bake for 25-30 minutes, flipping them halfway through, until they're golden and crispy.
