Mix honey, hot sauce, and chili flakes in a bowl. Pop it in the microwave for about 20 seconds until warm, give it a good stir, and let it cool down. Feel free to adjust the heat to your liking with extra chili flakes or hot sauce.

Slice each chicken breast horizontally through the middle to create 4 even pieces. In a small bowl, mix together your seasoning blend: paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.

Get three shallow dishes ready. In the first, mix flour with half the seasoning blend. Fill the second with beaten eggs. In the third, combine panko breadcrumbs with the remaining seasoning. Dip each piece of chicken in flour, then egg, and finally coat well with the seasoned breadcrumbs.

Heat enough oil to cover the bottom of a large pan over medium-high heat. Once hot (test with a breadcrumb - it should sizzle), carefully fry the chicken for 3-4 minutes per side until golden and crispy. Work in batches if needed, adding more oil between batches.

Top each piece of chicken with plenty of crumbled feta. Pop under the broiler until the cheese gets golden and slightly crispy on top, while staying soft and buttery underneath.

Drizzle with your prepared hot honey and serve immediately. Store any leftover honey in the fridge.
