In a medium bowl, thoroughly mix mozzarella, Parmesan, Italian seasoning, garlic powder, onion powder, and red pepper flakes until evenly combined.

Place heaping tablespoons of cheese mixture onto prepared baking sheet, spacing mounds at least 2 inches apart. Flatten each mound slightly with the back of a spoon.

Top each cheese round with 1–2 mini pepperoni slices or chopped pepperoni. If using additional toppings such as olives, bell pepper, or bacon, sprinkle them on now and press gently so they adhere.

Bake for 8 to 10 minutes, or until edges are golden brown and cheese is bubbling. Monitor closely during the final minutes to avoid over-browning.

Remove baking sheet from oven and let chips cool for 2–3 minutes. Transfer to a wire rack to cool completely and achieve a crisp texture.
