Add sliced potatoes, smoked sausage, and diced onion to the bowl. Toss until all ingredients are thoroughly coated.

Transfer the mixture evenly into the prepared baking dish and smooth the top.

Sprinkle remaining shredded cheddar cheese evenly over the surface.

Cover with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for 10 to 15 minutes, until golden and bubbling and potatoes are fork-tender.
