Creamy Crockpot Tortellini Soup (Print Version)

# Ingredients:

→ Meat & Pasta

01 - ¾ pound (375g) Italian sausage, mild or spicy
02 - 3 cups (250g) fresh or frozen cheese tortellini

→ Vegetables

03 - ½ onion, finely diced
04 - 2 large carrots, peeled and chopped
05 - 2 ribs celery, sliced
06 - 2 cups fresh chopped spinach or kale
07 - 3 cloves garlic, minced

→ Liquids & Seasonings

08 - 4 cups low sodium chicken broth
09 - 1 cup cream (any kind)
10 - 2 tablespoons tomato paste
11 - 1½ teaspoons Italian seasoning
12 - ¾ teaspoon salt
13 - ¼ cup finely grated Parmesan cheese

# Instructions:

01 - Cook Italian sausage and onion in large skillet over medium-high heat until browned. Drain excess fat if desired.
02 - Add tomato paste, Italian seasoning, garlic and salt to skillet. Cook 2 minutes more.
03 - Transfer sausage mixture to 4-6 quart slow cooker. Add broth, carrots, and celery.
04 - Cover and cook on low 5-6 hours or high 2-3 hours until vegetables are tender.
05 - Stir in tortellini, spinach, cream and Parmesan. Cook 10-15 minutes more until tortellini is al dente.

# Notes:

01 - Can substitute sausage with chicken or white beans
02 - Any type of cream works
03 - Can use any pasta, but cook separately if not using fresh
