Creamy Cajun Chicken Rice (Print Version)

Tender Cajun chicken with creamy Parmesan sauce over flavorful white rice; perfect for a comforting dinner.

# Ingredients:

→ Chicken

01 - 2 boneless, skinless chicken breasts, thinly sliced
02 - 1 1/2 tablespoons olive oil
03 - Cajun seasoning, to taste
04 - Onion powder, to taste
05 - Garlic powder, to taste
06 - Black pepper, to taste

→ Sauce

07 - 4 tablespoons unsalted butter
08 - 1 cup grated Parmesan cheese
09 - 1 1/2 cups heavy whipping cream
10 - Additional Cajun seasoning, to taste
11 - Paprika, to taste
12 - Black pepper, to taste

→ Serving

13 - Cooked white rice, for serving

# Steps:

01 - Cook white rice according to the package instructions until tender. Set aside and keep warm.
02 - Season both sides of sliced chicken breasts generously with Cajun seasoning, onion powder, garlic powder, and black pepper.
03 - In a large skillet, heat olive oil over medium-high heat. Sear chicken for 3 to 4 minutes per side or until fully cooked with an internal temperature of 165°F. Remove from skillet and allow to rest.
04 - In the same skillet, add unsalted butter and melt over medium heat. Pour in heavy whipping cream, then season with additional Cajun seasoning, paprika, and black pepper. Gradually add grated Parmesan cheese, stirring constantly until the sauce is smooth and creamy. Remove most of the sauce from the skillet, leaving a portion in the pan.
05 - Add the cooked rice to the skillet with the remaining creamy sauce. Toss well to coat and adjust seasoning with more Cajun seasoning and paprika as desired.
06 - Thinly slice the cooked chicken. Serve the rice onto plates, arrange sliced chicken on top, and drizzle with the reserved creamy sauce.
