Creamy Cajun Chicken Pasta (Print Version)

# Ingredients:

01 - 1 pound chicken breast, cut into 1-inch pieces
02 - 12 ounces penne pasta

→ Sauce

03 - 1 cup heavy whipping cream
04 - 1 can (14.5 oz) fire roasted diced tomatoes

→ Seasonings

05 - 2 tablespoons olive oil
06 - 1 teaspoon Cajun seasoning
07 - 1/2 teaspoon salt
08 - 1/2 teaspoon black pepper
09 - 1 tablespoon fresh parsley, chopped

# Instructions:

01 - Heat olive oil in a large skillet over medium-high heat. Season diced chicken with salt and pepper, then cook for 10-12 minutes until golden brown.
02 - Add diced tomatoes and Cajun seasoning to the chicken. Mix well and cook uncovered for 3-5 minutes until simmering.
03 - Pour in the heavy cream and heat for 1-2 minutes until warmed through. Stir in the cooked pasta and top with fresh parsley before serving.
