Cranberry Whipped Feta Dip (Print Version)

A creamy blend of feta and cranberries, swirled with orange zest and topped with pistachios and honey.

# Ingredients:

→ Cranberry Sauce

01 - 1/2 cup orange juice
02 - 1 cup granulated sugar
03 - 12 ounces cranberries, fresh or frozen
04 - or 2 cups prepared cranberry sauce

→ Whipped Feta

05 - 8 ounces feta cheese, block
06 - 1/2 cup cream cheese or Greek yogurt
07 - 2 tablespoons extra virgin olive oil

→ Toppings and Serving (optional)

08 - 2 tablespoons pistachios, chopped
09 - 1 teaspoon crushed red pepper flakes
10 - 1 tablespoon honey

# Steps:

01 - Combine orange juice, sugar, and cranberries in a medium saucepan. Stir thoroughly and bring mixture to a boil over medium heat. Reduce heat to low and simmer for 10 minutes until most cranberries pop open.
02 - Stir sauce constantly, smashing cranberries with the back of a spoon until the mixture thickens to preference. Allow to cool at room temperature for 15–20 minutes.
03 - Place feta cheese, cream cheese or Greek yogurt, and extra virgin olive oil in a food processor or blender. Blend until smooth, adding 1 teaspoon water at a time if needed to reach desired creaminess.
04 - Transfer whipped feta to a serving bowl and smooth the surface, creating decorative swirls with a spoon. Spoon cooled cranberry sauce over the top.
05 - Sprinkle the dip with chopped pistachios and crushed red pepper flakes. If desired, drizzle lightly with honey. Serve with crackers, pita chips, crostini, or assorted fresh vegetables.

# Notes:

01 - For best results, use a block of feta cheese rather than crumbled feta to achieve the creamiest texture.
