Crab Stuffed Cheddar Bay Biscuits (Print Version)

# Ingredients:

→ Biscuit Dough

01 - 1 package Cheddar Bay Biscuit Mix
02 - 1 teaspoon garlic powder
03 - 1 teaspoon Italian seasoning

→ Crab Filling

04 - 1 pound lump crab meat, fully cooked
05 - 0.25 teaspoon paprika
06 - 0.5 teaspoon onion powder
07 - 0.5 cup mayonnaise, plus extra as needed
08 - 1 tablespoon prepared mustard
09 - 2.5 ounces Ritz crackers, crushed (approximately half sleeve)
10 - 3.5 ounces grated parmesan cheese

→ Lemon Butter Glaze

11 - 2 tablespoons unsalted butter, melted
12 - 1 teaspoon freshly squeezed lemon juice

# Steps:

01 - Mix Cheddar Bay Biscuit Mix following the package instructions. Blend in garlic powder and Italian seasoning until evenly distributed. Set aside.
02 - Preheat oven to 375°F. Lightly grease two muffin tins with nonstick spray.
03 - In a mixing bowl, gently fold together lump crab meat, paprika, onion powder, mayonnaise, prepared mustard, crushed Ritz crackers, and grated parmesan cheese until just combined. Add additional mayonnaise if the mixture is too dry.
04 - Lightly flour hands. Portion dough into your palm and form shallow cups.
05 - Spoon crab mixture into the center of each dough cup.
06 - Cover each filled cup with an additional piece of dough, completely enclosing the crab filling. Pinch edges to seal.
07 - Set each sealed biscuit into a prepared muffin tin cavity.
08 - Bake for 12 to 15 minutes, or until biscuits are golden brown and set.
09 - Remove biscuits from oven and immediately brush tops with melted butter mixed with lemon juice.

01 - Ensure crab filling is well drained to prevent excess moisture in the biscuits.
