Crab Classic Quesadillas (Print Version)

# Ingredients:

→ Filling

01 - 8 ounces cooked crab meat, flaked
02 - 1 1/2 cups shredded cheddar cheese or Monterey Jack cheese
03 - 1/4 cup mayonnaise
04 - 2 tablespoons diced green onion
05 - 2 tablespoons diced bell pepper
06 - 1 teaspoon lemon juice
07 - Salt, to taste
08 - Ground black pepper, to taste

→ Tortilla and Cooking

09 - 4 large flour tortillas
10 - Butter or oil for cooking

# Steps:

01 - In a mixing bowl, combine flaked crab meat, shredded cheese, mayonnaise, diced green onion, diced bell pepper, lemon juice, salt, and black pepper until thoroughly mixed.
02 - Lay one tortilla flat and spread the crab mixture evenly over half of the surface.
03 - Fold the tortilla in half to enclose the filling. Preheat a large skillet over medium heat and add a small amount of butter or oil.
04 - Place the folded tortilla in the hot skillet and cook for 2 to 3 minutes on each side, or until golden brown and the cheese has melted.
05 - Remove from the skillet, let rest briefly, then slice into wedges and serve warm.
