In a small bowl, combine light brown sugar and ground cinnamon. Set aside. Toss chopped apples with 2 tablespoons granulated sugar in a separate bowl and set aside.

In a large mixing bowl, cream together softened butter and remaining granulated sugar until mixture is light and fluffy. Add eggs one at a time, mixing thoroughly after each addition. Stir in vanilla extract.

In a separate bowl, whisk together all-purpose flour, baking powder, and a pinch of salt until combined.

Gradually add dry ingredients to butter mixture, alternating with milk, beginning and ending with dry ingredients. Mix until just combined; do not overmix.

Spread half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter, then layer half of the sugared apples on top. Repeat layering with remaining batter, cinnamon sugar, and apples.

Bake in preheated oven for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.

Allow bread to cool in the pan for 10 minutes, then transfer to a wire rack and cool completely.

In a small bowl, mix powdered sugar with enough milk to reach a smooth drizzling consistency. Drizzle glaze evenly over the cooled bread.
