01 - 4 large eggs, hard-boiled and diced into 1/2-inch pieces
02 - 1 cup cottage cheese
03 - 1 1/2 tablespoons yellow mustard
04 - 1/3 cup dill pickles, finely diced
05 - 1/2 teaspoon dried dill
06 - 1/2 teaspoon freshly squeezed lemon juice
07 - 1/4 teaspoon paprika
08 - Salt, to taste
09 - Freshly ground black pepper, to taste
10 - 4 slices sandwich bread

# Steps:

01 - Dice the hard-boiled eggs into 1/2-inch pieces. Finely dice the pickles into 1/4-inch pieces. Measure out the cottage cheese, mustard, dill, lemon juice, paprika, and seasonings.
02 - In a medium mixing bowl, add the cottage cheese and mustard and stir until thoroughly blended.
03 - Add the diced eggs, pickles, dill, lemon juice, and paprika to the bowl. Gently fold the mixture together until just combined. Season with salt and black pepper to taste.
04 - Spoon the egg salad evenly onto two slices of bread for each sandwich. Top with the remaining slices. Slice each sandwich in half if desired, and serve immediately.
