# Ingredients:

01 - 8 large eggs
02 - 1 cup cottage cheese (0% - 2% fat content recommended)
03 - ½ cup shredded cheese

→ Seasonings

04 - ¼ teaspoon salt
05 - ¼ teaspoon black pepper
06 - ¼ teaspoon garlic powder
07 - ¼ teaspoon onion powder

→ Optional Mix-ins (choose up to 1 cup total)

08 - Chopped fresh spinach
09 - Diced bell peppers
10 - Broccoli florets
11 - Cooked sausage
12 - Diced ham

# Instructions:

01 - Preheat oven to 350°F and lightly grease a silicone muffin tray with non-stick cooking spray or oil to ensure easy removal of the egg bites.
02 - Combine eggs, cottage cheese, and all seasonings in a high-powered blender. Blend until the mixture is completely smooth.
03 - Pour about ¼ cup of the egg mixture into each muffin cavity.
04 - Top each cup with shredded cheese and your chosen mix-ins. Gently stir with the back of a spoon to incorporate. Add an extra sprinkle of cheese on top if desired.
05 - Bake for 18-22 minutes or until the egg bites are set and no longer jiggly. Let them cool slightly before removing from the tray.

# Notes:

01 - For an egg-white version, substitute whole eggs with 1.5 cups of egg whites (approximately 12 egg whites). Note that this version may be slightly more wet and less fluffy than the whole egg version.
