Set oven to 350°F and allow to fully preheat.

Combine almond flour and cottage cheese in a large mixing bowl. Stir with a spatula until the cottage cheese is thoroughly integrated and a soft dough forms.

Place the dough onto a large sheet of parchment paper. Cover with a second parchment sheet and roll out to a 9 x 12 inch rectangle, approximately 1/4 inch thick.

Remove the top sheet of parchment and transfer the dough, still on the bottom parchment, to a large baking sheet pan.

Bake for 25–30 minutes, or until the top is lightly golden. The dough should remain slightly undercooked for the next step.

Remove from oven and evenly sprinkle mozzarella cheese over the surface, leaving a 1/2 inch border along the edges. Add up to 1/2 cup additional cheese for richer flavor if desired.

Return to the oven and bake for 10 minutes or until cheese is fully melted and edges are golden brown.

Allow breadsticks to cool slightly before slicing and serving. Store leftovers refrigerated.
