3 Ingredient Cottage Cheese Breadsticks (Print Version)

Golden cheese breadsticks using almond flour, cottage cheese, and mozzarella. Soft, low-carb, and delightfully cheesy.

# Ingredients:

→ Dough

01 - 2 cups blanched superfine almond flour
02 - 1 cup small curd cottage cheese, 4% milkfat

→ Cheese Topping

03 - 1 to 1 1/2 cups shredded mozzarella cheese

# Steps:

01 - Set oven to 350°F and allow to fully preheat.
02 - Combine almond flour and cottage cheese in a large mixing bowl. Stir with a spatula until the cottage cheese is thoroughly integrated and a soft dough forms.
03 - Place the dough onto a large sheet of parchment paper. Cover with a second parchment sheet and roll out to a 9 x 12 inch rectangle, approximately 1/4 inch thick.
04 - Remove the top sheet of parchment and transfer the dough, still on the bottom parchment, to a large baking sheet pan.
05 - Bake for 25–30 minutes, or until the top is lightly golden. The dough should remain slightly undercooked for the next step.
06 - Remove from oven and evenly sprinkle mozzarella cheese over the surface, leaving a 1/2 inch border along the edges. Add up to 1/2 cup additional cheese for richer flavor if desired.
07 - Return to the oven and bake for 10 minutes or until cheese is fully melted and edges are golden brown.
08 - Allow breadsticks to cool slightly before slicing and serving. Store leftovers refrigerated.

# Notes:

01 - For crispier breadsticks, bake on the lower rack during the final bake. Add chopped fresh parsley after baking for a finishing touch.
