In a saucepan, combine the infused coconut water and dried lavender. Heat gently for about 10 minutes until fragrant. Remove from heat and let it steep for another 10 minutes.

Once cooled, strain the lavender infusion to remove the flowers and return the coconut water to the saucepan.

In a large pitcher, combine the lavender coconut water, fresh lemon juice, and honey or agave syrup. Stir well until the sweetener is fully dissolved.

Just before serving, pour in the sparkling water to give the drink a refreshing fizz. Adjust the sweetness if needed.

Fill glasses with ice, pour the mocktail over, and garnish with lemon slices and lavender sprigs.
