Sprinkle gelatin over 2 tablespoons of cold water in a small bowl and allow to sit for 5 to 10 minutes until softened.

In a medium saucepan, combine coconut milk, heavy cream, and sugar. Place over medium heat and stir until sugar is fully dissolved and mixture is warm but not boiling.

Add the bloomed gelatin and vanilla extract to the warm mixture, whisking until gelatin is completely dissolved.

Pour the mixture evenly into individual serving molds or cups. Let cool at room temperature for 30 minutes.

Place in refrigerator and chill for at least 4 hours until panna cotta has fully set.

Just before serving, top each panna cotta with diced fresh pineapple and toasted coconut flakes.
