Creamy coconut panna cotta paired with pineapple and toasted flakes for an elegant tropical treat.

# Ingredients:

→ Panna Cotta Base

01 - 1 cup coconut milk
02 - 1 cup heavy cream
03 - 1/2 cup granulated sugar
04 - 2 teaspoons unflavored gelatin or 1 packet
05 - 1 teaspoon pure vanilla extract

→ Topping

06 - 1 cup fresh pineapple, diced
07 - 1/4 cup toasted coconut flakes

# Steps:

01 - Sprinkle gelatin over 2 tablespoons of cold water in a small bowl and allow to sit for 5 to 10 minutes until softened.
02 - In a medium saucepan, combine coconut milk, heavy cream, and sugar. Place over medium heat and stir until sugar is fully dissolved and mixture is warm but not boiling.
03 - Add the bloomed gelatin and vanilla extract to the warm mixture, whisking until gelatin is completely dissolved.
04 - Pour the mixture evenly into individual serving molds or cups. Let cool at room temperature for 30 minutes.
05 - Place in refrigerator and chill for at least 4 hours until panna cotta has fully set.
06 - Just before serving, top each panna cotta with diced fresh pineapple and toasted coconut flakes.

# Notes:

01 - Ensure the milk and cream mixture is warm but not boiling before adding gelatin, as excessive heat can impair the setting process.
