Preheat oven to 350°F. Set a 1 1/2-quart round baking dish inside a larger deep baking pan.

In a small saucepan over medium heat, warm the milk until bubbles form around the edge. Remove from heat immediately.

In a large mixing bowl, whisk together eggs, granulated sugar, and salt until thoroughly blended but not foamy.

Gradually whisk the hot milk into the egg mixture to temper, then stir in vanilla extract.

Pour the custard mixture through a fine-mesh strainer into the prepared baking dish. Sprinkle evenly with ground nutmeg.

Place the larger baking pan onto the oven rack. Fill the pan with very hot water until it reaches 1/2 inch below the rim of the baking dish.

Bake for 55 to 60 minutes, or until a knife inserted near the center comes out clean. The center should remain slightly jiggly.

Carefully remove the baking dish from the water bath and transfer to a wire rack. Let cool for 30 minutes, then refrigerate until thoroughly chilled.
