Cinnamon French Toast Bites (Print Version)

# Ingredients:

01 - 4 thick slices of slightly stale white bread (about 1 inch thick)
02 - 2 large eggs (or 3 small ones if that's what you have)
03 - 1/4 cup milk
04 - Just a pinch of salt
05 - 1/4 cup white sugar
06 - 1/2 teaspoon cinnamon powder
07 - 3 tablespoons butter, divided
08 - Maple syrup for serving (trust me, you need this!)

# Instructions:

01 - Start by cutting the crust off each slice of bread, then chop each piece into 9 equal cubes. Think of them as little bite-sized treasures!
02 - In a medium bowl, whisk together the eggs, milk and a pinch of salt until well combined.
03 - Mix the sugar and cinnamon in a shallow bowl. This sweet mixture will make these bites taste like mini doughnuts!
04 - Melt half the butter (about 1 1/2 tablespoons) in a frying pan over medium-high heat. Don't let it brown or burn.
05 - Quickly toss half the bread cubes in the egg mixture, then use your hands to shake off any excess. Pop them in the hot pan and use a wooden spoon to gently turn them until they're golden brown on all sides – about 2-3 minutes total.
06 - Transfer the hot bread cubes directly from the pan into the cinnamon sugar mixture. Toss them around until they're well coated, then move them to a serving plate.
07 - Repeat the process with the remaining butter and bread cubes until all your French toast bites are cooked and coated.
08 - These are best enjoyed right away while still warm, with maple syrup on the side for dipping. Gather around and watch them disappear!

# Notes:

01 - Using slightly stale bread works best because it won't soak up too much egg mixture (avoiding soggy centers) and the cubes hold their shape better when cooking.
02 - This recipe makes enough for about 3 normal servings, 4 modest servings, or 2 servings for very hungry people who can't resist these doughnut-like bites!
03 - Feel free to use different breads like sourdough or leftover baguettes, though I find bread without grains works best for this recipe.
