In a large heatproof mixing bowl, add chopped cilantro, minced garlic, shallot or red onion, granulated sugar, curry powder, and chili powder.

Heat olive oil over medium-high heat until small bubbles form along the edges. Carefully pour the hot oil over the aromatics and spices in the bowl, allowing the mixture to sizzle and release fragrance.

Stir in mushroom oyster sauce, dark soy sauce, and fresh lime juice until well blended.

Add cooked noodles to the bowl and toss thoroughly to ensure each strand is evenly coated. Taste and adjust seasoning as needed.
