# Ingredients:

→ Noodle Base

01 - 5.3 ounces dry noodles

→ Herbs and Aromatics

02 - 1/2 cup chopped fresh cilantro
03 - 3 cloves garlic, minced
04 - 2 tablespoons finely chopped shallot or red onion

→ Seasonings

05 - 1 tablespoon granulated sugar
06 - 1 teaspoon curry powder
07 - 1/2 tablespoon chili powder

→ Sauce Components

08 - 1/4 cup olive oil
09 - 1.5 to 2 tablespoons mushroom oyster sauce
10 - 1 tablespoon dark soy sauce
11 - 2 tablespoons fresh lime juice

# Steps:

01 - Boil dry noodles in a large pot of water until just al dente. Drain and rinse under cold water to halt the cooking process, then set aside.
02 - In a large heatproof mixing bowl, add chopped cilantro, minced garlic, shallot or red onion, granulated sugar, curry powder, and chili powder.
03 - Heat olive oil over medium-high heat until small bubbles form along the edges. Carefully pour the hot oil over the aromatics and spices in the bowl, allowing the mixture to sizzle and release fragrance.
04 - Stir in mushroom oyster sauce, dark soy sauce, and fresh lime juice until well blended.
05 - Add cooked noodles to the bowl and toss thoroughly to ensure each strand is evenly coated. Taste and adjust seasoning as needed.
06 - Transfer to serving bowls. For additional heat, top with chili oil or preferred hot sauce. Serve immediately while warm.
