Chorizo Pizza Sandwich (Print Version)

# Ingredients:

→ Dough

01 - 1 whole pizza dough, quartered
02 - 1 cup all-purpose flour
03 - ½ cup cornmeal
04 - Olive oil, as needed

→ Choripan

05 - 3-4 chorizo sausages
06 - 9-10 mozzarella slices
07 - Mayonnaise (optional)
08 - Sliced tomatoes (optional)
09 - Sliced jalapeños (optional)

→ Chimichurri

10 - ¾ cup parsley, chopped
11 - ¼ cup red wine vinegar
12 - 4-6 garlic cloves, minced
13 - 1 tablespoon red chili flakes
14 - Olive oil to desired consistency
15 - Salt to taste

# Instructions:

01 - Preheat your pizza oven to 450-500°F.
02 - In a bowl, mix all the ingredients for the chimichurri (parsley, red wine vinegar, minced garlic, red chili flakes, olive oil, and salt). Set aside until ready to use.
03 - Add a cast iron skillet to the oven to preheat. Then add your sausage to the hot skillet and cook for 10-12 minutes until fully cooked. Remove and keep warm.
04 - Slice your pizza dough into quarters. Place on a well-floured workplace and stretch each piece into an 8-inch round.
05 - Drizzle oil over the flat dough pieces and top each with mozzarella cheese.
06 - Slightly fold each piece of dough onto itself (like a half-moon), drizzle with olive oil and place into the pizza oven to cook for 10 minutes or until the dough is fully cooked and cheese is melted.
07 - Once the dough is cooked and cheese is melted, slice up your sausages and place them into each pizza bun.
08 - Top with generous amounts of chimichurri, sliced jalapeños, sliced tomatoes, and mayonnaise if desired. Serve immediately and enjoy!
