# Ingredients:

01 - 2 cups almond flour
02 - 1/2 teaspoon baking soda
03 - 1 teaspoon baking powder
04 - 1/4 cup Dutch cocoa powder or regular cocoa powder
05 - 1/2 teaspoon salt

06 - 3 large eggs
07 - 2/3 cup granulated sugar
08 - 1 teaspoon vanilla extract
09 - 1/2 cup strong coffee, cooled
10 - 1/2 cup olive oil

→ Garnish

11 - Powdered sugar for dusting (optional)

# Instructions:

01 - Preheat oven to 165°C (325°F).
02 - In a large mixing bowl, beat eggs and sugar together with a hand electric mixer for about 20 seconds on medium-high speed. Add olive oil, coffee, and vanilla extract. Mix until fully combined.
03 - Add the almond flour, baking soda, baking powder, cocoa powder, and salt. Mix until smooth and fully incorporated.
04 - Pour the batter into a greased 23 cm (9-inch) cake pan. Bake for 35-43 minutes or until the batter is set and a toothpick inserted in the center comes out clean.
05 - Remove from the oven and let cool completely. Carefully flip the cake to release it from the pan, using a small spatula if needed to loosen any stuck edges. Dust with powdered sugar if desired before serving.
