Set oven to 375°F (190°C) to preheat.

Grease a 13×9-inch baking dish with 1 tablespoon butter to prevent sticking.

Pat chicken breasts dry and season both sides evenly with salt, lemon pepper, and paprika.

Arrange chicken, flat side down, in the prepared dish. Bake uncovered for 15–20 minutes.

Heat 1 tablespoon vegetable oil in a skillet over medium heat. Add spinach, cover, and cook for 1–2 minutes until wilted. Add minced garlic and half-and-half, bring to boil, then stir in shredded mozzarella. Cook on high, stirring, until the mixture turns creamy. Season with salt as needed and set aside.

Heat 1 tablespoon vegetable oil in a separate skillet over medium-high heat. Add sliced mushrooms and sauté for 1–2 minutes until browned. Do not salt mushrooms to ensure caramelization.

Remove chicken from oven. Top each breast with an even layer of creamed spinach, sautéed mushrooms, and chopped bacon. Lay 1 slice of Pepper Jack cheese on each piece.

Return assembled dish to oven and bake an additional 15–20 minutes until chicken is cooked through and juices run clear. If desired, broil for 2–4 minutes to brown the cheese.
