Chicken Creamed Spinach Bacon (Print Version)

Juicy chicken, creamy spinach, bacon, mushrooms, and cheese baked to perfection for weeknight meals.

# Ingredients:

→ Chicken

01 - 1 tablespoon unsalted butter
02 - 1.5 pounds skinless, boneless chicken breasts, halved
03 - Salt, to taste
04 - 0.25 teaspoon lemon pepper seasoning
05 - 0.25 teaspoon paprika

→ Creamed Spinach

06 - 1 tablespoon vegetable oil
07 - 10 ounces fresh spinach
08 - 4 cloves garlic, minced
09 - 0.67 cup half-and-half
10 - 0.67 cup mozzarella cheese, shredded

→ Additional Ingredients

11 - 1 tablespoon vegetable oil
12 - 4 ounces mushrooms, sliced
13 - 4 slices bacon, cooked and chopped
14 - 4 slices Pepper Jack cheese or Monterey Jack cheese with jalapenos

# Steps:

01 - Set oven to 375°F (190°C) to preheat.
02 - Grease a 13×9-inch baking dish with 1 tablespoon butter to prevent sticking.
03 - Pat chicken breasts dry and season both sides evenly with salt, lemon pepper, and paprika.
04 - Arrange chicken, flat side down, in the prepared dish. Bake uncovered for 15–20 minutes.
05 - Heat 1 tablespoon vegetable oil in a skillet over medium heat. Add spinach, cover, and cook for 1–2 minutes until wilted. Add minced garlic and half-and-half, bring to boil, then stir in shredded mozzarella. Cook on high, stirring, until the mixture turns creamy. Season with salt as needed and set aside.
06 - Heat 1 tablespoon vegetable oil in a separate skillet over medium-high heat. Add sliced mushrooms and sauté for 1–2 minutes until browned. Do not salt mushrooms to ensure caramelization.
07 - Remove chicken from oven. Top each breast with an even layer of creamed spinach, sautéed mushrooms, and chopped bacon. Lay 1 slice of Pepper Jack cheese on each piece.
08 - Return assembled dish to oven and bake an additional 15–20 minutes until chicken is cooked through and juices run clear. If desired, broil for 2–4 minutes to brown the cheese.

# Notes:

01 - Do not salt the mushrooms during sautéing; salting releases moisture and inhibits browning.
02 - For even cooking, ensure chicken breasts are uniform in thickness.
