Chicken with Buttered Noodles (Print Version)

# Ingredients:

01 - 2 boneless, skinless chicken breasts or thighs
02 - 8 ounces egg noodles

→ Sauce and Seasonings

03 - 2 tablespoons olive oil
04 - 3 tablespoons unsalted butter
05 - 2 garlic cloves, minced
06 - 1/2 cup chicken broth
07 - Salt and freshly ground black pepper, to taste
08 - 2 tablespoons chopped fresh parsley
09 - 1/4 cup grated Parmesan cheese (optional)
10 - Lemon wedges (optional, for serving)

# Steps:

01 - Pat chicken dry with paper towels and season evenly with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5 to 7 minutes per side until golden brown and internal temperature reaches 165°F. Remove chicken from skillet and let rest.
02 - In a large pot, bring salted water to a boil. Cook egg noodles according to package instructions until al dente. Drain, reserving 1/4 cup of pasta water.
03 - Return skillet to medium-low heat and melt butter. Add minced garlic and sauté for 1 minute until fragrant. Pour in chicken broth, scraping up any browned bits from the skillet. Simmer for 1 to 2 minutes.
04 - Add drained egg noodles to the skillet and toss thoroughly to coat with the butter sauce. Add reserved pasta water as needed to loosen the sauce to desired consistency.
05 - Slice rested chicken into strips and arrange atop the buttered noodles. Sprinkle with chopped parsley and, if desired, grated Parmesan cheese. Serve with lemon wedges on the side.
