Taco Rice with Ground Beef (Print Version)

01 - 1 small onion, finely chopped
02 - 2 cloves garlic, minced
03 - 1 pound lean ground beef
04 - 3 tablespoons taco seasoning (1 packet)
05 - 1 cup uncooked long grain white rice
06 - 2 cups low-sodium chicken broth
07 - 8 ounces tomato sauce
08 - 1 cup shredded cheddar cheese

11 - Sour cream

# Instructions:

01 - In a large skillet, brown the ground beef, breaking it into small pieces as it cooks
02 - Add the chopped onions and cook until softened and beef is no longer pink. Drain excess grease from the pan. Add minced garlic and cook for another minute until fragrant
03 - Sprinkle taco seasoning over the meat mixture and stir until evenly distributed
04 - Add rice, tomato sauce, and chicken broth. Mix well, bring to a boil, then cover and reduce heat to medium-low. Cook for about 20 minutes, stirring occasionally, until rice is tender
05 - Stir in shredded cheese until melted. Serve hot with your choice of fresh toppings
