Spread cooled taco meat evenly over the pastry, leaving a 1/2-inch border. Evenly sprinkle shredded cheese and add chopped cilantro and diced jalapeños if desired.

Fold one edge of puff pastry over the filling to cover and gently press to seal. Slice pastry into sticks about 1 to 2 inches wide.
