Cheesy Stuffed Meatloaf Bites (Print Version)

Bite-sized beef packed with melting cheese, baked until tender and topped with a savory glaze.

# Ingredients:

→ Meatloaf Mixture

01 - 450 g ground beef
02 - 60 g breadcrumbs
03 - 60 ml milk
04 - 1 large egg
05 - 1 small onion, finely chopped
06 - 2 cloves garlic, minced
07 - 1 teaspoon salt
08 - 0.5 teaspoon freshly ground black pepper
09 - 1 teaspoon Worcestershire sauce
10 - 120 g ketchup, divided
11 - 1 tablespoon prepared mustard

→ Filling & Garnish

12 - 85–115 g cheddar or mozzarella cheese, cut into small cubes
13 - Fresh parsley, chopped (optional, for garnish)

# Instructions:

01 - Preheat the oven to 190°C and lightly grease a mini muffin tin to prevent sticking.
02 - In a large bowl, thoroughly combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, black pepper, Worcestershire sauce, 60 g of the ketchup, and mustard using clean hands or a sturdy spoon until the mixture is uniform.
03 - Portion approximately 30 g of meat mixture, flatten it in your palm, place a cheese cube in the center, and encase the cheese by rolling into a ball. Transfer each ball to the prepared muffin tin cup.
04 - Mix the remaining ketchup (60 g) with a small amount of mustard. Spoon a thin layer of this sauce over each meatloaf bite.
05 - Bake in the center of the oven for 18 to 22 minutes until the meat is browned and cooked through. Confirm an internal temperature of 71°C for doneness.
06 - Allow the meatloaf bites to cool in the tin for 5 minutes. Remove carefully and garnish with chopped parsley if desired. Serve warm.
