Cheesy Sausage Egg Wraps (Print Version)

Eggs, sausage, and cheddar cheese wrapped in soft tortillas for a quick savory breakfast.

# Ingredients:

→ Egg Mixture

01 - 6 large eggs
02 - 2 tablespoons whole milk
03 - 1/4 teaspoon fine sea salt
04 - 1/4 teaspoon freshly ground black pepper

→ Filling

05 - 1 tablespoon unsalted butter
06 - 4 breakfast sausage links or 8 ounces ground breakfast sausage
07 - 1 cup shredded cheddar cheese

→ Wraps

08 - 4 large flour tortillas (8-inch diameter)

→ Optional Garnishes

09 - Salsa, for serving
10 - Hot sauce, for serving
11 - Chopped green onions, for serving

# Steps:

01 - Preheat a non-stick skillet over medium heat. Add sausage links and cook, turning occasionally, until evenly browned and thoroughly cooked, about 8 to 10 minutes. If using ground sausage, cook and break it up with a spatula until no longer pink. Remove sausage from pan and transfer to a plate.
02 - In a medium bowl, whisk the eggs with whole milk, salt, and black pepper until fully combined and no streaks remain.
03 - Melt unsalted butter in the same skillet over medium heat. Pour in the egg mixture and cook gently, stirring constantly with a spatula, until the eggs are softly set and still creamy. Remove skillet from heat.
04 - Heat each tortilla in the microwave for 10 to 15 seconds or in a dry skillet over medium heat for several seconds per side until warm and pliable.
05 - Evenly distribute scrambled eggs among the centers of the warmed tortillas. Top with cooked sausage and sprinkle each with cheddar cheese.
06 - Fold the sides of each tortilla inward, then roll up tightly from the bottom to encase the filling.
07 - For a crispy finish, place each wrap seam-side down in a preheated skillet over medium heat. Cook for 1 to 2 minutes per side, pressing gently, until golden brown and cheese is melted. Serve immediately with chosen garnishes.

# Notes:

01 - For best texture, avoid overcooking the eggs; they should be soft and slightly creamy.
