Place the cut potatoes in a large bowl. Drizzle with olive oil and sprinkle half of the prepared seasoning mixture over the potatoes. Toss until thoroughly coated.

Line a rimmed baking sheet with parchment paper or apply a light coating of oil. Spread the seasoned potatoes on the sheet in a single layer. Evenly distribute the sliced smoked sausage over the potatoes.

Transfer the baking sheet to the preheated oven. Roast for 35 to 40 minutes, stirring once halfway through, until the potatoes are golden and tender.

Remove the tray from the oven. Sprinkle the shredded cheddar cheese over the roasted potatoes and sausage. Return to the oven for 5 minutes, allowing the cheese to melt and become bubbly.
