# Instructions:

01 - If you're going the homemade route, follow your dough recipe first. Using store-bought? Let it hang out at room temperature for 20-30 minutes to get nice and pliable.
02 - Crank up your oven to 425°F. Divide your dough into 8 equal balls (about 2 ounces each) and roll each one into a roughly 6-inch square.
03 - Down the middle of each square, layer 1 ounce of fontina and a couple slices of provolone, leaving a ½-inch border. Sprinkle with ⅛ teaspoon each of oregano and garlic powder, then crown it with 8-10 slices of pepperoni.
04 - Roll the dough around all that cheesy-pepperoni goodness, tucking as you go. Pinch the edges to seal and place seam-side down on a parchment-lined baking sheet.
05 - Whisk together the egg and water, brush this golden mixture over your rolls. Shower them with parmesan and Italian seasoning. Bake for about 15 minutes until they're golden and crispy - don't worry if some cheese escapes, that's the best part!
