# Ingredients:

01 - 1 pound ground beef
02 - 3/4 cup oats, coarsely ground
03 - 2 large eggs
04 - 1 teaspoon salt
05 - 1/2 teaspoon onion powder
06 - 1/2 teaspoon garlic powder
07 - 1/2 teaspoon black pepper
08 - 1 teaspoon dried oregano
09 - 1/2 teaspoon ground cumin
10 - 1 teaspoon chili powder
11 - 1/2 teaspoon hot sauce, optional

12 - 10 ounces red enchilada sauce
13 - 2 cups shredded cheese (cheddar, Monterey Jack, Colby Jack, or pepper jack)
14 - Fresh cilantro, for garnish (optional)

# Steps:

01 - Preheat oven to 350°F. Lightly grease a 9 x 13 inch baking dish to prevent sticking.
02 - In a large mixing bowl, combine 1/4 cup enchilada sauce with ground beef, oats, eggs, salt, onion powder, garlic powder, black pepper, oregano, cumin, chili powder, and hot sauce if using. Mix until all ingredients are thoroughly incorporated.
03 - Shape the mixture into meatballs, approximately 1 1/2 inches in diameter. Arrange them in a single layer in the prepared baking dish.
04 - Pour the remaining enchilada sauce evenly over the meatballs. Cover the dish with foil and bake for 30 minutes.
05 - Uncover the dish, sprinkle the shredded cheese evenly over the meatballs, and bake for an additional 10 minutes until the cheese is fully melted and bubbly.
06 - Garnish the hot meatballs with chopped fresh cilantro, if desired, and serve immediately.
