In a large mixing bowl, combine the cooked rice, cubed ham, frozen green peas, condensed cream of chicken soup, sour cream, 2 cups of the shredded cheddar cheese, and all seasonings. Add hot sauce if using.

Transfer the mixture evenly into the prepared baking dish. Sprinkle the reserved 1 cup of shredded cheddar cheese over the top.

Place the baking dish in the preheated oven and bake uncovered for 30 minutes, or until bubbling and the cheese on top is melted and golden brown.

Remove from the oven and let cool for 5 minutes before serving.
