02 - 1 pound ground beef
03 - 1 small onion, finely chopped
04 - 2 cloves garlic, minced
05 - 1 teaspoon chili powder
06 - 1/2 teaspoon ground cumin
07 - 1/2 teaspoon paprika
08 - 1/2 teaspoon salt
09 - 1/4 teaspoon black pepper
10 - 1/4 cup tomato sauce or salsa

11 - 1 1/2 cups shredded cheddar cheese
12 - 1 cup shredded Monterey Jack cheese

13 - 6 large flour tortillas

# Steps:

01 - Warm olive oil in a large skillet over medium heat. Add ground beef and cook, breaking it apart, until deeply browned. Drain excess fat if needed.
02 - Add chopped onion to the skillet and sauté for 3 minutes until translucent. Incorporate minced garlic and cook for another minute, then blend in chili powder, cumin, paprika, salt, black pepper, and tomato sauce or salsa. Simmer for 3 to 4 minutes. Remove skillet from heat.
03 - Arrange flour tortillas on a clean surface. Distribute half the cheddar and Monterey Jack cheese on one side of each tortilla. Spoon warm beef mixture onto the cheese, then sprinkle with remaining cheese. Fold tortillas to enclose the filling.
04 - Preheat a clean skillet over medium heat and add a thin layer of butter or oil. Cook each quesadilla for 2 to 3 minutes per side until cheese melts and exterior becomes crisp and richly golden. Flip gently to prevent spillage.
