Cheesy Fiesta Taco Rice (Print Version)

01 - 1 pound ground beef
02 - 1/2 teaspoon salt
03 - 1/2 teaspoon black pepper
04 - 2 teaspoons chili powder
05 - 1 teaspoon ground cumin
06 - 1 teaspoon dried cilantro
07 - 1 medium onion, chopped
08 - 1 tablespoon minced garlic
09 - 1 can (10 ounces) Rotel diced tomatoes with green chilies, undrained
10 - 1 can (8 ounces) tomato sauce
11 - 1 can (10 ounces) whole kernel corn, drained
12 - 1 can (10 ounces) black beans, drained and rinsed
13 - 1 1/2 cups chicken broth or beef broth
14 - 1 cup long grain white rice, uncooked and rinsed
15 - 2 cups shredded Colby Jack cheese

16 - Sour cream, as desired
17 - Fresh cilantro, chopped, as desired
18 - Pico de gallo, as desired
19 - Taco sauce, as desired

# Instructions:

01 - In a large skillet over medium-high heat, brown the ground beef together with salt, pepper, chili powder, cumin, dried cilantro, and chopped onion, stirring frequently until the beef is thoroughly cooked and the onions are softened.
02 - Drain excess grease from the cooked beef mixture to ensure a balanced texture.
03 - Add the minced garlic, Rotel tomatoes with their juices, tomato sauce, black beans, corn, chicken or beef broth, and uncooked rice to the skillet. Stir well to evenly distribute all components.
04 - Cover the skillet with a lid and cook on medium-low heat for 15 to 20 minutes, stirring once halfway through, until the rice is tender and fully cooked.
05 - Blend half of the shredded Colby Jack cheese into the rice mixture, stirring until melted.
06 - Sprinkle the remaining cheese evenly over the surface. Let it melt with the residual heat or place the skillet briefly under a broiler until the cheese is bubbling and golden.
07 - Serve warm, garnishing each portion with sour cream, taco sauce, fresh cilantro, and pico de gallo as preferred. Accompany with tortilla chips if desired.
