Crack the egg into a small bowl and beat thoroughly with a fork until fully blended. Mix in grated cheese and finely chopped herbs. Season with salt and black pepper according to preference.

Evenly distribute the egg and cheese mixture over the prepared slices of bread, spreading all the way to the edges. Sprinkle a pinch of cayenne pepper if desired.
