Cheesy Egg Herb Toast (Print Version)

01 - 2 slices sandwich bread
02 - 1 large egg
03 - 1/2 cup (2 oz) grated cheese, such as cheddar, pepper jack, or Gruyere
04 - 1 teaspoon finely chopped fresh thyme or rosemary
05 - Salt, to taste
06 - Black pepper, to taste
07 - Pinch cayenne pepper, optional

# Steps:

01 - Lightly toast the slices of bread using a broiler for 1 to 2 minutes on each side, or until just beginning to brown.
02 - Preheat the oven to 400°F. If using a toaster oven, position the rack at the lowest setting and select the bake function.
03 - Crack the egg into a small bowl and beat thoroughly with a fork until fully blended. Mix in grated cheese and finely chopped herbs. Season with salt and black pepper according to preference.
04 - Evenly distribute the egg and cheese mixture over the prepared slices of bread, spreading all the way to the edges. Sprinkle a pinch of cayenne pepper if desired.
05 - Arrange the topped bread slices on a baking sheet. Bake in the preheated oven for 10 to 12 minutes, or until the topping is puffed, golden, and bubbling.
