Doritos Bacon Chicken (Print Version)

# Ingredients:

→ Protein

01 - 4 chicken breasts, no bones or skin

→ Filling

02 - 1 (226g) pack cream cheese, at room temperature
03 - 1 cup grated mozzarella or cheddar
04 - 6 bits cooked bacon, broken into pieces

→ Seasonings

05 - 1/2 teaspoon powdered garlic
06 - 1/2 teaspoon smoked paprika
07 - Salt and black pepper as needed

→ Breading

08 - 2 cups smashed Nacho Cheese Doritos
09 - 2 big eggs, whisked
10 - 1 cup plain flour
11 - 1 tablespoon milk
12 - Oil for cooking or spray for baking

# Instructions:

01 - Cut each chicken breast sideways to make a pocket, but don't slice all the way. Add salt, pepper, smoked paprika, and powdered garlic to both sides.
02 - Grab a bowl and mix the room temp cream cheese, grated cheese, bacon bits, powdered garlic, and a bit of salt and pepper. Stir everything together well.
03 - Push a big spoonful of filling into each chicken pocket. You might need some toothpicks to keep everything inside while cooking.
04 - Put flour in one dish. Mix eggs with milk in another dish. Dump crushed Doritos in a third dish.
05 - Roll each stuffed chicken in flour first, then dunk it in the egg mix, and finally roll in the Doritos crumbs. Push the crumbs onto the chicken so they stick good.
06 - Warm up oil in a big pan on medium heat. Fry each chicken piece about 4-5 minutes on each side until golden and done. The inside should be 74°C/165°F. Put on paper towels to soak up extra oil.
07 - Warm your oven to 190°C (375°F). Put the coated chicken on a baking sheet with parchment and spray with a bit of cooking spray. Bake for 25-30 minutes until golden and the inside reaches 74°C (165°F).
08 - Let the chicken sit for 5 minutes before you eat it. Take out any toothpicks. Serve with your favorite dip or a side salad.
