In a large mixing bowl, add the shredded chicken, cream of chicken soup, sour cream, frozen mixed vegetables, and 1 cup of the shredded cheddar cheese. Mix thoroughly until well combined.

Spread the mixture evenly into the prepared baking dish. Distribute the remaining 1 cup of shredded cheddar cheese over the top. Layer with crushed Ritz crackers, if desired.

Bake uncovered for 30 to 35 minutes, or until the casserole is hot and bubbling with a golden, melted cheese topping.
