Cheesy Cauliflower Steaks (Print Version)

# Ingredients:

01 - 2 medium cauliflowers (fresh and firm)
02 - 1 tablespoon vegetable oil, any neutral-flavored variety
03 - 1 teaspoon fine sea salt
04 - ½ teaspoon freshly ground black pepper
05 - 2 teaspoons onion powder

→ Cheese Topping

06 - ½ cup Parmesan cheese, finely grated
07 - ½ cup Gruyere cheese or sharp cheddar, finely grated

→ Garnish

08 - Fresh chives, finely chopped

# Instructions:

01 - Get your oven nice and hot at 400°F (200°C, or 180°C fan-forced). Line your largest baking sheet with parchment paper.
02 - Carefully cut 6 thick slices (about ¾ inch each) from your cauliflowers. Don't worry if some pieces fall apart - you can easily arrange them back together on the baking sheet.
03 - Sprinkle the Parmesan cheese across your lined baking sheet, then arrange the cauliflower slices on top in a single layer.
04 - Mix together the oil, sea salt, pepper, and onion powder in a small bowl. Brush this flavorful mixture over your cauliflower steaks.
05 - Pop them in the oven for 20 minutes, until they're tender when pierced with a fork.
06 - Top each steak with the grated Gruyere (or cheddar) and return to the oven for 10-15 minutes until the cheese turns golden and bubbly.
07 - Sprinkle with fresh chives and serve while hot and cheesy.

01 - Save those extra cauliflower pieces! They're perfect for freezing and using later in soups or as a side dish.
