Cheesy Cauliflower Mushroom Steaks (Print Version)

Cauliflower steaks roasted then topped with mushrooms, herbs, and bubbling cheese for hearty comfort.

# Ingredients:

→ Vegetable Base

01 - 1 large cauliflower head, sliced into 3/4-inch thick steaks

→ Oils and Fats

02 - Ghee or avocado oil cooking spray
03 - 1 tablespoon avocado oil or extra virgin olive oil

→ Mushroom Topping

04 - 8 ounces fresh button mushrooms, sliced
05 - 2 fresh garlic cloves, minced

→ Seasonings

06 - 1 tablespoon dry Italian seasonings
07 - Sea salt, to taste
08 - Fresh ground black pepper, to taste

→ Cheese and Garnish

09 - 1 cup shredded mozzarella cheese
10 - Fresh thyme, to garnish

# Steps:

01 - Preheat oven to 400°F. Spray two large baking sheets with ghee or avocado oil cooking spray.
02 - Arrange cauliflower steaks on the prepared baking sheets without overlapping. Brush each side lightly with avocado oil. Season evenly with sea salt, black pepper, and Italian seasonings. Roast in the oven for 20 to 25 minutes, turning steaks halfway, until both sides are golden brown.
03 - In a large mixing bowl, combine sliced mushrooms, minced garlic, a pinch of sea salt, and black pepper. Toss until mushrooms are evenly coated.
04 - Spread the mushroom mixture onto a separate baking sheet sprayed with cooking oil and bake in the oven for 10 to 15 minutes, or until tender. Alternatively, sauté mixture in a medium sauté pan with 1 teaspoon oil over medium-high heat for 5 to 6 minutes, stirring occasionally.
05 - Remove baking sheets from the oven. Top each roasted cauliflower steak with shredded mozzarella and spoon the mushroom mixture over the cheese. Return to oven for 2 to 3 minutes, or until cheese is fully melted and bubbling.
06 - Remove from oven and sprinkle cauliflower steaks with fresh thyme. Serve immediately while hot.
