Cheesy Beef Taco Pasta (Print Version)

A flavorful fusion dish combining spicy taco beef, tender pasta and gooey melted cheese for the ultimate comfort food.

# Ingredients:

→ Pasta Base

01 - 250g uncooked rotini pasta (or similar short pasta)

→ Taco Beef Mixture

02 - 500g lean ground beef
03 - 1 small onion, finely diced
04 - 2 cloves garlic, minced
05 - 30g taco seasoning (1 packet)
06 - 400g diced tomatoes, undrained
07 - 120ml water

→ Cheese and Toppings

08 - 200g shredded cheddar cheese
09 - 2 green onions, sliced
10 - Fresh cilantro leaves, chopped (optional)
11 - Sour cream for serving (optional)

# Steps:

01 - Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and set aside.
02 - While pasta cooks, heat a large skillet over medium-high heat. Add ground beef and cook until no longer pink, breaking it apart with a spoon, about 5-7 minutes.
03 - Add diced onion and garlic to the beef. Cook until onion is translucent, about 3 minutes.
04 - Sprinkle taco seasoning over the beef mixture and stir to coat evenly.
05 - Stir in diced tomatoes with their juices and water. Bring to a simmer and cook for 5 minutes until slightly thickened.
06 - Add the cooked pasta to the skillet and toss until well coated with the sauce.
07 - Sprinkle shredded cheese over the pasta mixture. Cover and cook on low heat until cheese is melted, about 2-3 minutes.
08 - Top with sliced green onions and cilantro if using. Serve hot with a dollop of sour cream if desired.

01 - For a spicier version, add 1-2 diced jalapeños with the onions or serve with hot sauce.
