Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and set aside.

While pasta cooks, heat a large skillet over medium-high heat. Add ground beef and cook until no longer pink, breaking it apart with a spoon, about 5-7 minutes.

Add diced onion and garlic to the beef. Cook until onion is translucent, about 3 minutes.

Sprinkle taco seasoning over the beef mixture and stir to coat evenly.

Stir in diced tomatoes with their juices and water. Bring to a simmer and cook for 5 minutes until slightly thickened.

Add the cooked pasta to the skillet and toss until well coated with the sauce.

Sprinkle shredded cheese over the pasta mixture. Cover and cook on low heat until cheese is melted, about 2-3 minutes.

Top with sliced green onions and cilantro if using. Serve hot with a dollop of sour cream if desired.
