03 - 1.75 pounds russet potatoes, sliced
04 - 2 bell peppers, sliced
05 - 1 pound lean ground beef
06 - 1 small onion, finely chopped
07 - 2 garlic cloves, minced
08 - 1 teaspoon sweet paprika
09 - 1 teaspoon ground black pepper
10 - 1 teaspoon Italian seasoning
11 - 1/2 teaspoon salt
12 - 1/2 teaspoon red chili flakes
13 - 2 tablespoons tomato paste
14 - 2 tablespoons chopped fresh parsley, plus extra for garnish
15 - 2 cups chicken broth
16 - 1 1/2 cups grated cheddar cheese

# Steps:

01 - Heat olive oil and butter in a large skillet over medium-high heat. Add sliced potatoes and cook for 5–7 minutes until golden brown. Remove potatoes and set aside.
02 - Add sliced bell peppers to the skillet and sauté for 3–4 minutes until slightly softened.
03 - Add lean ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink.
04 - Add chopped onion and minced garlic. Sauté for 2–3 minutes until fragrant and translucent.
05 - Stir in sweet paprika, black pepper, Italian seasoning, salt, chili flakes, tomato paste, and chopped parsley. Return cooked potatoes to the skillet and mix thoroughly.
06 - Pour in chicken broth to cover the mixture. Cover and simmer for 10–15 minutes until potatoes are fully tender.
07 - Remove the lid and let any excess liquid evaporate on medium heat, if needed.
08 - Evenly sprinkle grated cheddar cheese over the beef and potato mixture. Cover the skillet and allow cheese to melt, about 2 minutes.
09 - Garnish with additional chopped parsley and a pinch of chili flakes. Serve warm.
