In a skillet over medium-high heat, cook ground beef and finely chopped onion with a pinch of kosher salt and black pepper until browned, about 6–8 minutes. Stir in ketchup and yellow mustard until fully combined.

Allow tater tots to cool slightly. Press baked tots firmly into the wells of a muffin tin to form cone or cup shapes. Bake for an additional 10 minutes to set the shape.

In a bowl, mix the cooked beef mixture with crumbled bacon, cheddar cheese, and mozzarella cheese until evenly incorporated.

Carefully spoon the cheeseburger filling into each tater tot cone, pressing gently. Top with additional cheese or bacon if desired.

Return filled cones to the oven and bake for 5 minutes, or until the cheese is melted and bubbling.
