Cheesy quesadillas packed with juicy beef and a zesty burger sauce, perfect for a quick mealtime upgrade.

# Ingredients:

→ Beef Mixture

01 - 450 g lean ground beef
02 - 1 teaspoon fine sea salt
03 - 0.5 teaspoon freshly ground black pepper
04 - 0.5 teaspoon garlic powder
05 - 0.5 teaspoon Worcestershire sauce

→ Tangy Burger Sauce

06 - 120 ml mayonnaise
07 - 2 tablespoons grated onion
08 - 2 tablespoons ketchup
09 - 1 tablespoon sweet pickle relish
10 - 2 teaspoons yellow mustard
11 - 1 teaspoon white vinegar
12 - 0.25 teaspoon paprika

→ Quesadilla Assembly

13 - 4 large flour tortillas
14 - 16 thin slices cheddar cheese
15 - 120 ml chopped dill pickles
16 - 120 ml finely minced onion
17 - 1 tablespoon olive oil

# Steps:

01 - Combine mayonnaise, grated onion, ketchup, relish, mustard, vinegar, and paprika in a bowl. Mix thoroughly until homogenous, then cover and refrigerate for optimal flavor development.
02 - Heat a large skillet over medium-high heat. Add ground beef and break apart with a spatula, cooking for 5–7 minutes until thoroughly browned. Drain excess fat from the skillet.
03 - Return skillet to heat and incorporate salt, black pepper, garlic powder, and Worcestershire sauce. Stir to thoroughly coat all beef, then remove from heat.
04 - Arrange tortillas flat on your work surface. Place two slices of cheddar on half of each tortilla. Evenly distribute seasoned beef over cheese, then top with minced onions and chopped pickles. Layer with two additional slices of cheddar per tortilla. Fold each tortilla into a half-moon.
05 - Wipe out the skillet or use a clean pan. Heat over medium-high and add olive oil. Once shimmering, add a filled tortilla and cook for 2–3 minutes per side until golden brown and crisp. Work in batches as needed.
06 - Transfer toasted quesadillas to a cutting board. Allow to rest for 1 minute, then slice into portions. Serve immediately with chilled burger sauce for dipping.
