Combine mayonnaise, ketchup, yellow mustard, sweet relish, vinegar, garlic powder, and smoked paprika in a mixing bowl. Mix thoroughly until smooth and refrigerate until assembly.

Heat crinkle-cut French fries in an air fryer or conventional oven according to package directions until crisp and golden. Set aside.

Form ground beef into four evenly sized patties if not pre-shaped.

Heat a griddle or large skillet over medium-high heat. Melt butter and add chopped onions, cooking while stirring frequently until onions are softened and deeply caramelized.

Place patties onto hot griddle. Press each with a burger smasher to flatten. Spread yellow mustard on each patty and season with hamburger seasoning. Allow a crust to develop, then flip and continue cooking until cooked through. Remove and chop into bite-sized pieces.

Lay one tortilla flat. Spread a generous layer of animal-style sauce. Add a portion of fries, a slice of American cheese, chopped burger, caramelized onions, an additional slice of cheese, and a little more sauce. Fold and roll the tortilla into a tight burrito shape.

Place rolled burritos seam-side down onto the hot griddle over medium heat. Cook until the exterior is golden brown and crisp on all sides. Remove from heat and serve immediately.
